to raw, or not too raw?

This summer I’ve been eating a lot of raw food, simply because it’s been too hot to cook much. I’m not necessarily a huge fan of raw food diets – I’ve been 100% raw for eight months in the past, and in the end I found it too restrictive and not nourishing enough. I like many of my vegetables cooked, and I enjoy the variety that I get from preparing vegetarian stews and soups as well as salads.

This is one of my favorite salads this summer, made with romaine, sweet bell pepper, tomato, purslane, sauteed mushrooms, potatoes and sweet potatoes, and scrambled eggs. With a homemade dressing.
